Easy Creamy Garbage Soup is something everyone can make and unlike the name implies, it’s not really garbage. In fact, it can be one of the tastiest and healthiest soups you can make.  Actually, the title could easily be something like “clean out the Fridge” soup LOL!.  The first time we had a version of it was when our niece Sonia decided to make soup and pulled a bunch of odds and ends out of the refrigerator and threw them together—an amazingly delicious soup that still ranks as one of the best tasting soups we’ve ever had!

There’s No Recipe!:

There’s no recipe? Well not a conventional one, but there are some simple things you need to do.  Start by looking in your refrigerator and pulling out all those leftover veggies that might not keep, or are insufficient to use as a side dish. This will help you establish an idea as to what spices or seasoning you’d like to incorporate in your soup.

So What Do I Need To Get Started?

For starters, you’ll need some soup stock/broth. Then you need to decide if your soup will be vegetarian, vegan, or one based on chicken stock or beef broth. Your final decision will be whether to make them from scratch or to purchase a ready-made stock.  My wife Vicki decided to create this creamy garbage soup using organic unsalted chicken stock since that’s what we had on hand.  Of course, if you prefer to make your own soup stock, that’s easily done as well, and for vegetarian broth, you need to start with vegetables from your refrigerator!

Makes 4 to 5 servings

INGREDIENTS:

  • 3 cups (750 ml) unsalted chicken broth or vegetable stock
  • 1 tsp (4 g) tarragon
  • 1 tsp (4 g) thyme
  • Salt & Pepper to taste
Here’s What Went Into Vicki’s Soup:
  • 1 Onion
  • 1 Carrot
  • 2 Stalks of Broccoli
  • A handful of Baby Spinach Leaves
  • 1 Zucchini
  • 3 Mushrooms
  • The core of a head of leaf Lettuce
  • 1 Red Potato

INSTRUCTIONS:

  • Chop all your ingredients.
  • Using a medium-sized pot heat the soup stock at medium high.
  • Add the chopped celery, onion, and carrot and cook for 10 minutes.

  • Add the remaining ingredients and cook for 10 minutes.
  • Add the tarragon, thyme, salt and pepper, and reduce heat to low.
  • Cover and simmer for 10 to 20 minutes.
  • Once all ingredients are softened, transfer soup to a blender and blend until smooth.

All remaining ingredients added top to pot to cook Soup returned to pot after blending

  • Serve soup hot immediately or transfer back to the pot to reheat and serve later.

Notes:

There are endless options when creating your version of Garbage Soup and if you opt for more root vegetables like parsnips and potatoes, you might want to adjust your seasonings and consider adding garlic, or cream and top with fresh herbs when serving. Have fun with it—and enjoy!
